Applesauce Cookies

1/2 cup coconut oil or cooking oil (or soft butter if not dairy-free)

3/4 cup applesauce

2 3/4 cup gluten-free flour

1 1/2 cups packed brown sugar

1 teaspoon ground cinnamon

1 teaspoon salt

1 teaspoon vanilla

1/2 teaspoon baking soda

2 eggs

1 cup chopped pecans or walnuts (optional)

Cinnamon Icing:

2 cups powdered (icing) sugar

2 tablespoons milk

1 teaspoon vanilla

1/2 teaspoon cinnamon.

Preheat oven to 375F (190C). Mix applesauce and oil or butter. Beat in remaining ingredients. Drop dough by rounded teaspoonfuls about 1 inch (3 cm) apart on ungreased cookie sheet. Bake until almost no indentation remains when touched, about 8 to 10 minutes. Immediately remove from cookie sheet. Mix icing and ice the cookies when cool.
