Chocolate Nut Coconut Bars

My husband’s favorite cookie!

Base:

10 tablespoons (125 grams) butter or margarine (Some kinds of margarine have wheat in them. Check label.)

1/2 cup brown sugar

1 egg

1 teaspoon gluten-free baking powder

1 cup gluten-free flour

1/2 cup dessicated coconut

Blend. Place in greased 9 x 13 inch (23 x 33 cm) pan . Bake for 15 minutes at 350F (180 C).

Topping:

1 can (14 ounce or 395 gram) can sweetened condensed milk

2/3 cup chocolate chips (or white chocolate or butterscotch)

1 1/3 cups shredded coconut

1 cup chopped walnuts

Make sure crust is browned before adding toppings. Spread milk over the base, then spread the other ingredients on top and bake 5 more minutes.

Cheaper substitute for sweetened condensed milk:

1 cup whole powdered milk

1/2 cup boiling water

2/3 cup sugar (or brown sugar for caramel taste)

3 tablespoons (40 grams) melted butter
