Dairy and Gluten Free Brownies

Bring 2 eggs to room temperature before beginning. Grease 8 X 8 baking pan. (Double recipe for 9 x 13 pan.)

2/3 cup melted coconut oil

1/3 cup cocoa powder

2 eggs, room temp

3/4 cup sugar (or 1/2 white sugar and 1/4 cup brown)

1/4 teaspoon salt

1/4 teaspoon xanthan gum or guar gum (optional)

1 teaspoon vanilla extract

3/4 cup gluten free flour mix

Preheat oven to 350 F (175 C) Mix ingredients with a mixer until well blended. (If the eggs are cold they will make the coconut oil go solid and make the whole process harder.) Spread the batter in the greased pan. (It can be thick and hard to spread. Wet your hands and push dough into place or dip hands in flour to do this. Then use water on fingertips to mix the flour into the top so it doesn’t look funny.) Bake until done, but not overcooked, about 25 to 30 minutes. Cool and cut into squares.
