Fruit Rice Salad

2 cups apples, cored, peeled and diced

1/4 cup pineapple or apple juice

3 cups cooked and cooled rice

1 cup chopped celery or pineapple

1 cup chopped walnuts

1/2 cup raisins

1/4 cup shredded carrots

3/4 cup plain gluten-free yogurt

3/4 cup gluten-free mayonnaise

1/2 teaspoon salt

Mix apples with juice. Stir in rice, celery or pineapple, walnuts, raisins, and carrots. Make dressing by stirring together the other ingredients. Stir dressing into salad and chill until serving.
