Buy gluten-free ginger cookies. Crush them and mix with ground walnuts. Substitute this for graham cracker crumbs in the standard recipe. My favorite tip for gluten free desserts is to buy GF ginger cookies and crush them, then use the crumbs along with ground walnuts in a crumb crust for cheesecakes, etc.
