Gingerbread Men

1 3/4 cup Gluten Free flour

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/2 teaspoon ginger

2 teaspoons sugar for slightly sweet, 1/4 cup sugar for sweeter cookies

4 tablespoons (50 grams) butter or margarine

3 tablespoons golden syrup or maple syrup

several tablespoons of milk

Mix dry ingredients. Melt butter and mix with syrup. Pour over dry ingredients. Mix with your hands, adding milk until the consistency makes a dough that is easy to work with. Roll out with rolling pin until it is about 1/4 inch (5 mm) thick. Cut with gingerbread man cookie cutter. Bake on greased pan for 15-20 minutes at 375F (190C) until lightly browned. Decorate with icing and GF candies. (Thin powdered sugar (icing sugar) with water to make icing.

  1. Lovely! I’ve been gluten-free for six years and have not had success with GF cut-out cookies until today. The dough rolled out okay and the cookies really kept their shape in the oven. They taste good and are not overly sweet. I liked that I didn’t have to cream the butter or chill the dough. I even used my own GF flour blend, homemade mock maple syrup and baked them in a toaster oven– and they still turned out great. Thanks! We’ll enjoy these in our family for years to come.
