Ingredients
1/4 cup (50 grams) butter
6 cups gluten-free marshmallows
1 tablespoon cocoa powder
5 1/2 cups gluten-free Rice Krispies or rice bubble cereal
white icing (1/2 cup gluten free powdered (icing) sugar mixed with 1-2 teaspoons milk)
gluten-free decorative candies
Instructions
Melt butter in microwave in large bowl. Then add marshmallows and put in microwave for about a minute. Take out and stir mixture until all the marshmallows are all melted together. Then stir in cocoa powder until color is an even brown. Stir in Rice Krispies until they are thoroughly coated and look brown. Press into a greased 9 x 13 inch (23 x 33cm) pan, working to achieve as level a top as possible. (Tip: Dip fingers in cold water as you press mixture into pan.) Cool until set. Take out of pan and place on a cutting board. Cut gingerbread men out with cookie cutters that can cut through the thickness of Marshmallow Treats. Decorate with icing and candies.

These treats taste great, but the consistency is not as even as a true gingerbread man’s would be. They don’t have to be perfect. They’re still fun, easy to make, gluten-free, and good for kids of all ages who aren’t wild about ginger.
