This recipe is especially designed to be made with ingredients which are easily available in China.
Middle Kingdom Flaky Gluten-Free Bread
Mix 1 pkg yeast, ¼ cup sugar, and ¾ cup wrist-temp water (use ½ cup if you want to shape bread.)
Let set 5 minutes in warm place. Stir in ¼ c oil and 2 eggs.
Add 1 2/3 c sticky rice flour糯米粉(nuo mi fen), 2/3 c potato starch 土豆淀粉 (tudoudianfen), 1/3 c millet flour小米面(xiao mi mian) and 1 tsp salt.
Let rise. Bake in 9 inch round pan (greased or silicon) at 350F (167 C) in a toaster oven.
