Superb GF Chocolate Cake
14 tablespoons (7/8 cup or 175 grams) butter
1 ¾ cup sugar
1 teaspoon vanilla extract
3 eggs
½ cup cocoa
2 cups gluten-free all purpose flour
2 teaspoons baking powder
1 cup milk
Preheat oven to 350F (175C). Grease 9 x 13 (22 x 33 cm or ring tin)pan with butter and dust with a little GF flour.
Cream together butter, sugar, vanilla and eggs in a large bowl for quite a while until light. Blend cocoa, flour, and baking powder together and beat alternately into creamed mixture with the milk. Beat well and pour into pan. Bake for about 30 minutes until toothpick inserted into center comes out clean. Remove from oven for five minutes, then remove from pan if desired.
Fudge Frosting
2 ½ cups powdered (icing) sugar
1/3 cup cocoa
4 tablespoons (50 grams) butter
¼ cup+ water
1 teaspoon vanilla
Combine sugar and cocoa. Add boiling water and butter and beat with mixer until smooth. Beat in vanilla until smooth. Covers top of 9x 13 cake.
